    Banana Nut Bread

    Banana Nut Bread is seriously one of my favorite foods. There's something special about a recipe which actually calls for rotten bananas. Ok, maybe not rotten. Let's just called them "neglected" bananas. Regardless, it's perfect for someone like me who typically avoids the kitchen at all costs.

    My good friend Becky made her recipe the other night at women's bible study. Holy cow... this stuff is so good! If you don't already have a family recipe for this delectable dulce, feel free borrow this one.

    Ingredients
    2 Ripe or "Neglected" Bananas
    1/2 Cup Nuts (pick your favorite!)
    2 Eggs
    1/2 Cup Sugar
    1 3/4 Cup Flour
    1/2 Cup Vegetable Oil
    1/4 Cup + 1 tbsp. Buttermilk
    1 tsp. Baking Soda
    1/2 tsp. Salt
    1 tsp. Vanilla

    Instructions
    Combine the bananas, nuts, eggs, sugar and vegetable oil together in a mixing bowl. DO NOT use a mixer. Instead fold ingredients together so they are mixed well, but still lumpy (THIS IS IMPORTANT). In a separate bowl, combine the flour, baking soda and salt. Then, mix the ingedients of both bowls together. Add the buttermilk and vanilla. Pour into baking pan and bake (on the middle rack) at 325 degrees for 1 hr. 20 minutes.
